About Green Veggie Raita... Recipe

An easy peasy raita recipe that goes well with just about anything, be it a biryani or a pulao or barbecues. It is a versatile salad that can be made for any party. Keep the veggies chopped in the morning except the red onion and whip up this salad just 30 minutes prior to the party. It will just vanish from the table within a few minutes due to it's lovely texture that comes from the crunch of the veggies used. This is entirely my idea and i often serve this atleast twice every week. Happy Blending !!!!!!!!!!!!!!!!!

Green Veggie Raita...

Ingredients to make Green Veggie Raita...

  • yoghurt 400 gm
  • salt 1 tbsp
  • cucumbers chopped 2 cups
  • Lettuce finely chopped 3 cups
  • spring onions finely chopped 2 cups
  • Red onion thinly sliced 1
  • green chillies finely chopped 4
  • garlic mince 1 tsp
  • coriander leaves finely chopped 1/2 cup
  • mint leaves finely chopped 1/2 cup

How to make Green Veggie Raita...

  1. Whisk the yoghurt in a bowl with salt.
  2. The yoghurt should be chilled.
  3. Stir in all the veggies and the garlic mince too.
  4. Mix everything well.
  5. Serve immediately to retain the crunch.
  6. This should be consumed immediately and do not store it in the refrigerator for future use.
  7. As this salad leaves a lot of water, it is highly recommended not to make it in large quantities.
  8. Make it just 30 minutes prior to serving and keep it refrigerated until then, well covered with a cling wrap.
