Sauce with red wine and tomato makes this chicken pasta dish so exotic and rich.

Ingredients Serving: 4

  1. Pasta- 1 packet (500 gms) ( I used farfalle pasta)
  2. Salt-1 tsp
  3. oil-1 tbsp
  4. olive oil- 2 tbsp
  5. Garlic pods-15-18,chopped
  6. Tomato-2 big ,around 200 gms
  7. pepper powder- 2 tsp
  8. Red chilly powder- 1 tsp( optional)
  9. Red wine-1\4 cup
  10. Mixed Italian herbs- 2 tsp
  11. Salt- to taste
  12. For chicken:
  13. Boneless chicken (chicken breast)-200 gms
  14. ginger garlic paste- 1 tsp
  15. turmeric powder- 1\2 tsp
  16. Red chilly powder- 1 & 1\2 tsp
  17. Pepper powder-1\2 tsp
  18. Apple cider vinegar- 1 tsp
  19. Salt -to taste
  20. oil- to shallow fry it.
  21. For topping:
  22. Grated cheese & parsely leaves

Instructions

  1. Clean the chicken well and cut in to small pieces.Add to it ginger garlic paste,turmeric powder,chilly powder,pepper powder,vinegar,salt and ix it well.Let it marinate for some time.
  2. Peel the skin of garlic and chop it finely.Add tomato in mixer and make a puree of it.
  3. Cook pasta according to the instructions given in the packets.I boiled water ,added pasta along with salt and oil.In about 20 mins it was done.Drain the water and keep ready.
  4. Heat oil a flat pan and shallow fry the marinated chicken pieces and keep ready.
  5. Heat olive oil in another big pan,add in chopped garlic and saute well.Then add in the prepared tomato puree to it.Add in all dry powders and the red wine.cover ,check for salt and spice and adjust if needed.cover and cook for 1-2 minutes
  6. When the sauce is about become thick and the oil floats on top add in the cooked pasta,fried chicken pieces and toss it well so that it get mixed with the sauce.
  7. Top with with some grated cheese, parsely and serve hot.
