Ingredients Serving: 6

  1. Basmati Rice – 1 cup
  2. Fresh Coconut – 3 cups (grated)
  3. Ghee – 2 tbsp
  4. Onions – 2 (finely sliced)
  5. Cloves – 2 to 3
  6. Cinnamon – 1” stick
  7. Green Cardamom – 2 to 3
  8. Turmeric – 2 tsp
  9. Sugar – 1 tsp
  10. Salt – as per taste
  11. Cashew nuts (split) – 10 to 12

Instructions

  1. Wash and soak rice in lukewarm water for 20 to 30 minutes.
  2. Blend coconut with 3 cups warm water and express the coconut milk.
  3. Fry some sliced onions till golden crispy.
  4. In a pan, heat ghee and sauté for a few minutes. Add salt, sugar and turmeric. Add coconut milk (2 ½ cups approx) and cover & simmer until rice is cooked
  5. Serve hot garnished with fried onions.
