Ingredients Serving: 6

  1. Full cream Milk – 3 litres
  2. 2 tblsp yogurt
  3. Castor Sugar – 600gm
  4. Saffron – a pinch, soaked in a tbsp of rose water or vetiver essence
  5. Green Cardamom – 12 pcs, powdered
  6. Pistachio – 20, sliced
  7. Fresh Fruits (Pomegranate / Apple / Grapes / Dry

Instructions

  1. Boil the milk and set aside to cool till a thick layer of cream is formed on the top. Mix the cream into the milk. Add yogurt into the fresh milk and leave to curdle.
  2. Hang the freshly made full cream yoghurt into a muslin cloth for a couple of hours.
  3. In a mixing bowl, remove the hung yoghurt and add to it the soaked saffron mix, castor sugar and cardamom powder. Mix well and whisk till a thick creamy texture is obtained.
  4. Cover and chill in the refrigerator for a couple of hours. Serve garnished with pistachio slivers.
  5. Shrikhand can also be made using various fresh fruits like pomegranate, grapes, strawberries and mango. In summers, add fresh mango puree and reduce the amount of sugar.
