ABOUT Banana Flower Quiche with Sweetpotato crust RECIPE

Quiche made with banana flower petals and onion masala. The outer crust is made of sweet potato slices which makes it extra tasty and special.

Ingredients Serving: 3

  1. Sweet potato 2
  2. Banana Flower petals 50
  3. Onion 1/2 to 1
  4. Garlic 5 cloves
  5. Salt as req.
  6. Oil as req.
  7. Cheddar cheese for topping
  8. For the batter: Coconut milk 1/2 cup
  9. Egg 2
  10. Salt as req.
  11. Pepper crushed 1 tsp or more
  12. Cinnamon powder/nutmeg powder 1/2 tsp

Instructions

  1. Arrange sweet potato pieces sliced thinly, in a baking tin greased with oil. The arrangement should be such that the bottom and the sides are covered completely. Bake this in a preheated pressure cooker or oven for 15 mins. The crust is ready now.
  2. Meanwhile, chop the banana flower petals and put it in thin buttermilk until usage.
  3. In a pan, pour oil, add fine chopped garlic and onion, salt, any other masala powder if required, and finally the banana flower petals(after squeezing the buttermilk), everything one by one and saute well in between.
  4. Spread the prepared stuffing over the sweet potato crust evenly.
  5. Now, with the 'for the batter' ingredients, prepare the batter' and pour this too over the stuffing. Top with grated cheddar cheese or any other cheese of your choice as well.
  6. Now, bake the mixture again in a preheated pressure cooker or oven for 25-30 mins. That's it. Slice into pieces when cooled and serve.
