Ingredients Serving: 3

  1. Chicken legs - 4
  2. Butter for basting
  3. Chat masala to sprinkle
  4. For 1st marinade
  5. Kashmiri red chilli powder - 1 tbsp
  6. Lemon juice - 2 tsp
  7. Salt to taste
  8. For second marinade
  9. Yogurt (hung for 30 min) - 1&1/2 cup
  10. Kashmiri red chilli powder - 1 tbsp
  11. Cumin powder - 1 tsp
  12. Garam Masala Powder - 1 tbsp
  13. Kasuri methi - 1 tsp
  14. Salt to taste (remember we have added salt in 1st marinade as well)

Instructions

  1. 1) Start by cleaning and washing the chicken well.
  2. 2) Take the chicken in a bowl and make incisions. Add 1 tbsp of kashmiri red chilli powder, lemon juice and salt, mix well and leave aside for 30 minutes.
  3. 3) Next take the ingredients mentioned under second marinade , mix very well. Now add this mixture to the already marinated chicken and give a good mix.
  4. 4) Leave the chicken to marinate for min 6 hours or overnight depending upon the time you have (I marinated it overnight in refrigerator)
  5. 5) When you are ready to cook, keep the marinated chicken out for 20 minutes.
  6. 6) Preheat the oven @ 200 degrees C.
  7. 7) Line the baking tray with foil paper, place the chicken over it leaving some gaps in between, pour the leftover marinade over the chicken.
  8. 8) Bake for 30 - 35 minutes depending upon the oven. Baste the chicken with butter halfway and turn over so that it gets cooked well on both sides.
  9. 9) To get that charred effect transfer the baking tray to top most rack in the oven and change the setting to grill mode and increase temp to 250 degrees C.
  10. 10) Grill for 5 minutes , turn the chicken pieces and grill for further 3 - 4 minutes to get that charred effect.
  11. 11) Once done remove from the oven and set aside for 2 - 3 minutes.
  12. 12) Serve with mint chutney, lemon wedges and sprinkle some chat masala on top. Enjoy.
