Ingredients Serving: 4

  1. For the boiled chicken:
  2. Boneless Chicken Breasts 300 Gms
  3. Chicken Bones (To impart flavour to the dish) 2-3
  4. Garlic 4 Cloves
  5. Onion (Peeled and Chopped into 4 halves) 1/4
  6. Bay leaf 1
  7. Black Peppercorns 5-6
  8. Cinnamon stick 1"
  9. Salt to taste
  10. Water
  11. For the Gravy :
  12. Onion (Finely chopped) 1 Large
  13. Tomatoes (Finely chopped) 2 Medium
  14. Ginger Garlic Paste 1 & 1/2 Tbsp
  15. Cashew nut Paste 3 Tbsp
  16. Yogurt 3 Tbsp
  17. Cinnamon stick 2"
  18. Green Cardamoms 4-5
  19. Cloves 5-6
  20. Bay leaves 2
  21. Red Chilli Powder (You can use less if you want it to be less spicy) 1 Tbsp
  22. Turmeric powder 1/2 tsp
  23. coriander powder 1 tsp
  24. Cumin powder 1 tsp
  25. Tandoori Chicken Masala (Optional – Adds an extra zing to the dish) 1 Tsp
  26. Garam masala powder 1 tsp
  27. Butter 1 Tbsp
  28. Refined Oil 3 Tbsp
  29. Hard Boiled Egg (Chopped into small pieces) 1
  30. Kasuri Methi (Fenugreek Leaves) 1/2 Tsp
  31. FRESH CREAM 2 TBSP
  32. Salt to taste
  33. Chunk of Cooking Coal (Optional - Required for the smoky flavour) 1

Instructions

  1. For the boiled chicken:
  2. Combine all the ingredients in a vessel and boil for around 15-20 mins.
  3. Remove from heat and strain the water. Reserve the water (stock) and discard the bones.
  4. Let the boneless chicken come to normal temperature.
  5. Shred the boneless chicken into thin strips with the help of a fork or by hand as illustrated in the pic above.
  6. For the Gravy :
  7. Heat Oil in a wok. Add Cardamoms, Cinnamon, Bay Leaf and Cloves and fry till they release their aroma.
  8. Now add the finely chopped onions and salt and sauté till golden brown in colour.
  9. Now add the ginger garlic paste and sauté till the smell of it goes away.
  10. Now add the chopped tomatoes and cook on low flame covered till the tomatoes are soft.
  11. Meanwhile take turmeric, cumin, coriander, red chilli and tandoori chicken masala and mix it with ½ cup of stock that was reserved from the boiled chicken.
  12. When the tomatoes are soft , pour in the prepared masala and stir on high flame till the masala leaves oil.
  13. Now add the shredded chicken to it. And fry for around 2-3 mins.
  14. Add the cashew nut paste and Yogurt (mixed with ½ cup of stock and stirred well to avoid lumps).
  15. Now add around 2 cups of the stock and cook till the chicken is fully cooked and a thick gravy consistency is achieved.
  16. Now add the cream and stir well.
  17. Add the fenugreek leaves, garam masala powder, butter and chopped hard boiled egg and mix well.
  18. Burn a charcoal and place it in a bowl. Place this bowl inside the bharta and cover for 5 mins so that the smoky flavour gets infused.
  19. The smoked chicken bharta is ready to serve with rotis/butter naan etc...
