Ingredients to make Malai kulfi in sevai basket

  • Roasted Vermicelli 1 cup
  • water 1 cup
  • sugar 1/3 cup
  • Rose water 1 tbsp
  • For kulfi
  • Milk 1 cup
  • Milk powder 2 tbsp
  • Fresh cream /malai 2 tbsp
  • sugar 3 tbsp
  • cardamom powder 1/4 tesp
  • Chopped nuts/fruits to top

How to make Malai kulfi in sevai basket

  1. Boil milk and then reduce to 1/3 on SIM, stiring occasionally.
  2. Add sugar and milk powder. Mix well and cook for other 2-3 minutes.
  3. Remove from fire.
  4. Mix fresh cream and cardamom powder well.
  5. Cool and freeze to set.
  6. For basket boil water.
  7. Add roasted vermicelli and cook covered on sim for around 3-4 minutes until water dries up and vermicelli swells perfectly.
  8. Add sugar and rose water and cook covered for other 2 minutes to dissolve sugar well.
  9. Line cupcake moulds with sweet vermicelli giving the shape of cup by spreading along base and walls of mould.
  10. Rest them for 20 minutes and then demould. Sevai baskets are ready.
  11. Fill sevai baskets with a scoop of malai kulfi and top with chopped desired fruits and nuts.
