About Pumpkin Rasavangi Recipe

Rasavangi is a curry made with brinjal or pumpkin . This can be served along with the white rice or as a side dish.

Pumpkin Rasavangi

Ingredients to make Pumpkin Rasavangi

  • White pumpkin-1 cup cubed
  • coconut oil-2 teaspoon
  • mustard seeds -1 teaspoon
  • tamarind- 1 gooseberry size
  • turmeric powder-1/2 teaspoon
  • curry leaves few
  • salt to taste
  • To roast and grind
  • Channa dal -1 tablespoon
  • Urad dal -1 tablespoon
  • Red chillies-6
  • coriander seeds-1 tablespoon
  • oil - 1 teaspoon
  • Grated coconut-1/2 cup
  • Asefotida-1/2 teaspoon

How to make Pumpkin Rasavangi

  1.  In a kadai,heat oil, roast the ingredients except coconut given under roast and grind
  2. Add coconut and grind into fine paste along with water
  3. In same kadai add coconut oil ,Splutter mustard, curry leaves. Add pumpkin pieces and saute it.Add turmeric powder, tamarind extract, salt and boil until pumpkin is cooked well
  4. Now add the ground paste and cook for few more minutes .
  5. Garnish with coriander leaves

My Tip:

We can use brinjal and make it in same method
