ABOUT Fruit Rabari RECIPE

rabri recipe - a traditional indian sweet of thickened sweetened milk with layers of cream.

Ingredients Serving: 4

  1. 1 liter full cream milk
  2. Suger 3 spoon
  3. Cardemom powder 1/2 tbsp
  4. pomegranet 1/4 cup
  5. Orenge slice 1/4 cup
  6. Apple choped 1/4 cup
  7. Banana choped 1/4 cup
  8. Black grapes 1/4 cup
  9. Green grapes 1/4 cup
  10. Cardemom powder 1/2 tbsp

Instructions

  1. take 1 liter of full fat whole milk in a thick bottomed kadai or pan & begun to heat the milk on a low to medium flame .
  2. till the milk starts to froth or form a layer of cream/malai on top.
  3. so when you will see the cream floating on top, then with a spatula, gently move the cream layer.
  4. bring it towards the side of the pan and stick it to the pan.
  5. keep on simmering the milk like this.
  6. do keep a check on the simmering milk. once the milk reduces to half , then add 2.5 to 3 tbsp sugar. you can add sugar as per your taste.
  7. then add 1/2 tsp cardamom powder. stir gently.
  8. continue collecting the cream and bringing it to the sides of the pan. also do stir the milk gently after you bring the cream towards the sides of the pan .
  9. if you don't stir the milk then there is a possibility of the milk getting browned or burnt from the bottom.
  10. when the milk gets reduced to 1/3 or 1/4 of its original quantity, then switch off the flame.
  11. Chopped all fruits.
  12. Now cool it at room tempreture . then freej it for 1hour.
  13. choped or sliced all fruits . Add all fruts in rabari . and serve this chilled fruit rabari...
  14. Serve it
  15. Remaining rabri u can store in freej .
