ABOUT Kolhapuri chicken RECIPE

This is one flavourful chicken curry..Taste really fantastic. It has lots of onions in them and whole spices. They are roasted and ground to perfectly. The colour for this dish comes from roasting of the onions so take your time to roast it.

Ingredients Serving: 9

  1. Chicken – 1 kg
  2. Oil – 3 tblspn
  3. Curry leaves a handful
  4. Coriander leaves – 2 handful finely chopped
  5. Coriander Powder – 2 tblspn
  6. Chilli Powder – 1 tsp
  7. Garam Masala Powder – 1 tsp
  8. For Masala: Oil – 2 tblspn
  9. Fennel Seeds – 2 tsp
  10. Cumin Seeds – 1 tsp
  11. Cinnamon– 3 cm piece
  12. Cardamom– 5
  13. Cloves – 2
  14. Black Pepper – 2 tsp
  15. Sesame Seeds – 2 tblspn
  16. Coconut – 1/2 cup grated
  17. Garlic – 6 cloves
  18. Onion – 500 grams sliced thinly
  19. Tomato – 500 grams chopped
  20. Salt to taste
  21. For Marination:
  22. Chilli Powder – 1 tblspn
  23. Ginger Garlic Paste – 2 tblspn
  24. Garam Masala Powder – 1 tsp
  25. Turmeric Powder – 1 tsp
  26. Lemon Juice – 3 tblspn

Instructions

  1. Start by marinating chicken with the ingredients given for marination well.
  2. Heat oil in a kadai. Add in whole spices, garlic, sesame seeds, coconut and roast for a min. Add in onions, salt and cook till golden.
  3. Take this in a blender and add in tomatoes. Make it into a smooth puree.
  4. Heat some more oil in a kadai. Add in curry leaves and the ground masala. Add in the spices and cook till oil separates.
  5. Add in chicken and toss well. Transfer this to a pressure cooker, add in water and coriander leaves. Pressure cook for 15 to 20 mins on a low heat.
  6. Turn the heat off and let the steam go all by itself. Open the cooker and add in another handful of coriander leaves. Serve.
