Oats Sweet Paniyaram is a delicious and healthy snack dish. I have learnt this recipe from my friend Champa Mallya. Special thanks to her as my son Kavin, who is a fussy eater and likes this very much.

Ingredients Serving: 5

  1. Ingredients: Oats - 1 cup (heaped)
  2. Rice flour- 1/2 cup
  3. Wheat flour- 1 cup
  4. Maida / All purpose flour - 2 tbsp (optional)
  5. Curd - 2 tbsp
  6. Bananas- 2 medium sized
  7. Cardamom powder- 1/2 tsp
  8. Grated coconut - 2 tbsp
  9. Baking soda- a pinch
  10. Salt- a pinch
  11. Jaggery - 1 cup (powdered) / 2 blocks

Instructions

  1. In a pan, mix jaggery and water and boil till it melts. Keep aside and allow it to cool.
  2. In a separate bowl, add oats, wheat flour, rice flour, salt, cardamom powder and coconut. Mix well. After that add the mashed bananas and curd. Give it a mix. Pour the filtered jaggery syrup over the flour and banana mixture to prepare a batter.
  3. Add water if necessary. Heat the kuzhipaniyaram pan, add 1 to 2 tsp oil or ghee into each hole. Pour the batter in each hole and allow it to cook in a medium flame.
  4. Allow to cook till both sides turn golden brown in colour. Serve hot.
