ABOUT Mutton Dak Bungalow RECIPE

'Dak bungalow' are roadside rest houses where the travelers used to take rest. The owners of the bungalow used to cook this dish with fresh spices, eggs and vegetables, a complete meal in itself. The dish is highly aromatic and flavorful from the spice mix that's used in the recipe. A perfect recipe for a special occasion at home.

Ingredients Serving: 2

  1. Mutton marinade
  2. Mutton 500 g
  3. Turmeric powder 1 teaspoon
  4. Red chilly powder 1 teaspoon
  5. Ginger garlic paste 1 tablespoon
  6. Salt 1 teaspoon
  7. Mustard oil 2 tablespoon
  8. For the curry
  9. Eggs hard boiled 2
  10. Potatoes 2
  11. Radhuni (celery seeds) 1/2 teaspoon
  12. Fenugreek seeds 1/4 teaspoon
  13. Bay leaf 2
  14. Onion sliced 2
  15. Ginger garlic paste 1 tablespoon
  16. Green chillies 2
  17. Tomatoes 1 chopped
  18. Salt to taste
  19. Sugar 1/2 teaspoon
  20. For the spice mix
  21. Cumin seeds 1 teaspoon
  22. Coriander seeds 1 tablespoon
  23. Dried red chillies 2
  24. Mace 1
  25. Black cardamom 1
  26. Green cardamon 3
  27. Cinnamon stick 1 inch
  28. Nutmeg powder 1/4 teaspoon
  29. Black pepper 1 teaspoon

Instructions

  1. Wash and clean the mutton. Marinate the mutton with the ingredients curd, turmeric powder, red chilly powder, salt, Ginger garlic paste, mustard oil that are mentioned under marination.
  2. Marinate the mutton for 2-4 hours.
  3. Dry roast the ingredients mentioned under spice mix and grind it coarsely.
  4. Marinate the boiled eggs and potatoes with a little turmeric powder and salt,keep aside for 10 minutes.
  5. Take oil in a pressure cooker, fry the hard boiled eggs till lightly golden in color.
  6. Fry the potatoes till golden brown.
  7. Add some more mustard oil, to that add radhuni, fenugreek seeds and bay leaf.
  8. Add sliced onions and a pinch of salt. Cover in cook till the onions turn translucent.
  9. Add ginger garlic paste and green chillies.
  10. After 2 minutes add the chopped tomatoes and a tablespoon of the spice mix.
  11. Once the tomatoes turn soft add the marinated mutton and rest of the spice mix, Salt and sugar.
  12. Keep stirring and sauteing till the oil starts releasing from the sides, take almost about 10 minutes on a medium flame.
  13. Add a little water and pressure cook for 10-12 minutes on a low flame after the 1st whistle.
  14. Release the pressure, add the fried potatoes and pressure cook for another 5-7 minutes on low flame.
  15. Allow the pressure to release on it's own.
  16. Open the lid and add the boiled eggs. Mix well and serve hot with steamed rice.
