Kashmiri Phirni with jelly

Ingredients to make Kashmiri Phirni with jelly

  • 1 Litre Milk
  • 1/2 Cup Basmati rice washed and soaked for 2-3 hours
  • 1/4 Cup sugar
  • 10-12 Soaked and Peeled almonds
  • 1 Teaspoon Green cardamom Powder
  • Slivered pistachios and Saffron for garnishing
  • Edible Silver Leaf / Warak 
  • You can aslo add Tspn of Rose water or Rose Essence
  • Whipped cream
  • Strawberry Jelly 1 packet

How to make Kashmiri Phirni with jelly

  1. Combine soaked rice and almonds in a mixie Jar and grind to a coarse paste.
  2. Pour milk in a pan and bring it to a boil.
  3. Add coarse paste of rice and almonds and stir continously as it sticks at the bottom.
  4. Cook rice mixture on medium-low heat.
  5. Once mixture is cooked properly and thickens like custard, add sugar and stir.
  6. Add slivered Pistachios, Cardamom Powder and Saffron Strands.
  7. Switch Off gas and remove Phirni in other bowl and let it cool at room temperature first and then refrigerate it for few hours. 
  8. Prepare jelly as per instructions on Packet.
  9. Let the jelly mixture cool a bit at room temperature.
  10. Pour this jelly mixture over set phirni.
  11. Keep refrigerated until jelly sets .
  12. Granish with Whipped Cream and Pistachios.
