ABOUT MORINGA LEAVES SIDEDISH-HEALTHY DRUMSTICK LEAVES FRY-MUNAGAKU FRY RECIPE

Nature has given us an abundance of greens to be consumed. Making greens a part of our regular diet keeps us healthy and fit. Many love eating drumsticks either in their sambar or as a curry; however its leaves are the richest source of many essential trace minerals like selenium, manganese, potassium etc which help us maintain good health. Moringa leaves could be cooked fresh, they could be dried and used as currries with rice and chapatis and it is easy and fast to cook. This dish has all the essential ingredients like onion, garlic, fenugreek seeds which are good for heart too. Essentially this is a dish for anyone who loves being healthy. Ingredients Serving: 2

  1. Oil – 2 tsp
  2. Urad dal – ½ tsp
  3. Mustard seeds – ½ tsp
  4. Cumin seeds – ¼ tsp
  5. Fenugreek seeds – 1/8 tsp
  6. Dry red chillies – 2
  7. Curry leaves – few
  8. Onion chopped – 1 cup
  9. Garlic cloves peeled – ¼ cup
  10. Turmeric powder – ¼ tsp
  11. Salt – ¼ tsp
  12. Dry moringa leaves – 2 cups
  13. Water – 2 tsp

Instructions

  1. In a pan, add 2 tsp oil and heat it. Add ½ tsp urad dal, ½ tsp mustard seeds, ¼ tsp cumin seeds, 1/8 tsp fenugreek seeds, 3 dry red chillies, a few curry leaves and sauté for a minute.
  2. Add 1 cup chopped onions and ¼ cup peeled garlic cloves, ¼ tsp turmeric powder and ¼ tsp salt and again sauté them and cover with lid for 2 minutes.
  3. Once the onions are glazed, add 2 cups of dry moringa i.e. drumstick leaves, mix well once and add 2 tsp water and mix again and cook it on low flame with lid covered for 5 minutes till the raw flavor is gone.
  4. Moringa leaves fry curry is now ready to be served with hot rice… Eat it with raw onions, it’s so yummy… Thank you for reading the recipe!
