Heat oil to a smoking point and allow it to cool down to room temperature.
Wash and pat dry the turmeric and ginger with a kitchen towel or place it in the sun for a while to dry. Then grate them well, but not too finely.
To a clean and dry bowl add all the ingredients. Mix it well and transfer to a sterilized jar.
Your fresh turmeric and ginger pickle is ready. It tastes best when eaten on the second day.
