This mapas s a delicious creamy curry made with veg in coconut milk . This goes well with all types of rotis.

Vegetable mapas.

Ingredients to make Vegetable mapas.

  • Cooked mixed veg 2 cups, like( cabbage, carrots, peas, cauliflower & potato.)
  • onion 1 or 1 1/2 chopped
  • green chillies 2 sliced
  • curry leaves a few.
  • salt
  • oil 2 to 3 tbsp
  • Thin coconut milk 1cup. ( if 2 nd milk)
  • Thick coconut milk 1 1/2 ups
  • To grind
  • ginger garlic paste.1/4 tsp( or chopped )
  • coriander powder 1 tsp
  • chilli powder 1 tsp.or according to taste.
  • Garam masala 1 or 2 pinch
  • turmeric
  • Garnish
  • curry leaves.

How to make Vegetable mapas.

  1. Grind the given ingredients to a fine paste.
  2. Heat a pan with oil. Add onion green chillies & curry leaves. Fry well.
  3. Then add ground Masala. Fry till raw smell goes. Sprinkle some water if needed.
  4. Then add cooked vegetables along with salt & 2nd coconut milk. Stir well. Cook for a few seconds.
  5. Then add 1 st coconut milk. Let it simmer for some more min. Remove ,when curry s semi thick.
  6. Add some more curry leaves. Stir well.
  7. Serve hot.

My Tip:

Add any veg in this gravy. Take care while adding Masalas, as this s a plain curry without much Masalas.
