ABOUT Avalose Unda RECIPE

One of my grandma's speciality is her Avalose Unda. Everytime we returned from Kerala or whenever she visited us, there would be a tin of Avalose Unda with her. Sharing my grandma's recipe here, though today You easily get readymade Podi in market, I still prefer traditional way and my grandmother makes it best. This snack is also popularly called as nallu mani palharam(4oclock Snack) in Kerala. Avalose podi has quite health benefits and can be consumed as is or with little sugar mixed. Since I have sweet tooth, my Grandma used to make her special unda. Enjoy these yummy unda as snack or dessert

Ingredients Serving: 4

  1. For Avalose Podi
  2. 13/4 cup ponni rice(Or any good quality raw rice)
  3. 1 cup grated coconut
  4. 1/2 tsp Salt
  5. 1/2 tsp sesame seeds
  6. 1/2 tsp cumin seeds
  7. For Unda(if using readymade podi use 3 cups)
  8. 11/3 cup grated jaggery
  9. 5-6 cardamom pods freshly ground
  10. 1 tbsp ghee+ additional for smearing
  11. 1/2 cup water

Instructions

  1. SOAK RICE IN WATER FOR 5-6 HOURS
  2. CLEAN RICE THOROUGHLY, DRAIN EXCESS WATER
  3. SPREAD RICE UNDER SUN TO DRY. SHOULD BE DRY WITHIN 1 HOUR
  4. GRIND RICE TO FLOUR. SHOULD BE BIT COARSE. NOT VERY FINE FLOUR
  5. TRANSFER FLOUR TO BOWL
  6. PULSE COCONUT SO THAT IT'S FINE. DO NOT GRIND TO PASTE
  7. ADD COCONUT TO RICE FLOUR
  8. ADD SALT
  9. USING HANDS, MIX WELL
  10. COVER THE MIXTURE AND KEEP IT ASIDE FOR 1 HOUR
  11. DRY ROAST SESAME SEEDS LIGHTLY
  12. DRY ROAST CUMIN SEEDS UNTIL AROMATIC
  13. CRUSH CUMIN SEEDS FINELY
  14. HEAT PAN, ADD FLOUR MIXTURE
  15. DRY ROAST UNTIL VERY LIGHT BROWN. SHOULD TAKE AROUND 25 MINUTES
  16. ADD CUMIN AND SESAME SEEDS. STIR WELL FOR A MINUTE
  17. ALLOW MIXTURE TO COOL COMPLETELY
  18. LIGHTLY GRIND MIXTURE TO REMOVE LUMPS. YOU CAN USE HANDS TOO INSTEAD OF GRINDING
  19. AVALOSE PODI IS READY. IT WILL LAST FOR 6 MONTHS IF STORED IN AIRTIGHT CONTAINER
  20. SEPERATE 1/4 CUP PODI IN ANOTHER BOWL
  21. MELT JAGGERY IN 1/2 CUP WATER
  22. SIEVE JAGGERY FOR IMPURITIES
  23. HEAT JAGGERY SYRUP IN A PAN
  24. SWITCH OFF ONCE IT REACHES ONE STRING CONSISTENCY. DON'T OVERCOOK
  25. ADD GHEE AND CARDAMOM TO AVALOSE PODI
  26. ADD JAGGERY SYRUP TO PODI
  27. USING WOODEN SPATULA MIX WELL
  28. SMEAR GHEE ON HANDS. START FORMING LADOO(UNDA) WHILE STILL BEARABLY HOT
  29. ROLL UNDA OVER AVALOSE PODI
  30. STORE IN AIRTIGHT CONTAINER
