ABOUT Mutton Gravy RECIPE

This is a Sindhi dish which is cooked in a gravy made of deep brown onions. Its called "Raddhala Teevan" or "Daag Waro Teevan" in Sindhi.

Ingredients Serving: 5

  1. Mutton - 1 Kg
  2. Onions - 5 Large Thinly Sliced
  3. Tomatoes - 4-5 Chopped
  4. Ginger - Garlic Paste - 2 Tsp
  5. Turmeric Powder - 1 Tbsp
  6. Coriander Powder - 2 Tbsp
  7. Red Chilli Powder - 2 Tsp
  8. Garam Masala Powder - 2 Tsp
  9. Salt to taste
  10. Coriander Leaves for garnishing
  11. Oil - 4 Tbsp

Instructions

  1. Clean and wash the mutton pieces.
  2. Heat oil in a pressure cooker. Add the onions and fry them till they turn into a very dark brown color.
  3. Add the tomatoes and about a cup of water. Pressure cook the onions and tomatoes till 3 whistles.
  4. To the onions, add the mutton, ginger garlic paste, turmeric powder, coriander powder and salt.
  5. Mix well and keep cooking on high flame. Keep adding little water and continue to saute till it turns a dark brown color.
  6. Once it turns dark brown, add enough water for gravy and lastly, garam masala powder. Cover and cook on low flame till mutton becomes tender.
  7. Finally, garnish with coriander leaves.
