Ingredients to make Cheesy corn dip

  • 2 cans of sweet corn
  • 1/2 cup Mayonnaise (low fat)
  • 1/2 cup cream cheese (low fat)
  • 1/2 cup sour cream (low fat)
  • 1/2 cup grated chedder cheese
  • 1/4 cup grated mozzarella cheese
  • 2 cloves of crushed garlic
  • 1 tbsp mix dry herbs
  • 4-5 stalks of spring onion
  • Salt and pepper
  • 2 tsp chopped parsley
  • corn chips or tortilla chip for serving

How to make Cheesy corn dip

  1. In a large bowl, mix all the ingredients except the mozzarella cheese and chopped parsley.
  2. Preheat the oven at 170 degrees celsius. Transfer the corn and cheese mix in an oven proof dish and sprinkle on top the mozzarella cheese .
  3. Bake it at 170 degrees celsius for 25-30 minutes or till the cheese is all bubbly and the top is slightly brown in colour.
  4. Remove from the oven and let it cool for 10 minutes. Sprinkle chopped parsley on top and serve.
