ABOUT Andhra Tomato Chutney RECIPE

A yummy tomato chutney that is usually served with rice.

Ingredients Serving: 4

  1. 3 ripe tomatoes
  2. 5-6 shallots
  3. 2-3 garlic flakes
  4. 2 green chillies
  5. 2 tsp urad dal
  6. 1/2 tsp cumin seeds
  7. 1/2 coriander seeds
  8. 1/4 tsp red chilli powder ( optional )
  9. A small piece of tamarind
  10. 1 tsp oil
  11. Salt to taste

Instructions

  1. Chop the tomato into big chunks.
  2. Heat 1/2 tsp oil in a wok. Add the urad dal, cumin and coriander seeds. Fry till they turn fragrant.
  3. Remove and transfer to a plate. Allow it to cool a bit before transferring it to a mixer jar with the tamarind and salt. Grind into a powder.
  4. Meanwhile add the remaining oil to the wok. Add green chillies followed by the tomato chunks. Fry till the tomatoes start to soften a bit. Remove and allow to cool a bit.
  5. Add it to the mixer jar and buzz to get a smooth paste.
  6. Finally add the garlic and shallots and buzz for 1-2 seconds. (small chunks of the shallots and garlic should remain ). Serve it with rice.
