ABOUT Udupi Sambar RECIPE

My kid loves Udupi style sambar hence I make this frequently at home whenever I prepare Idli Vada. Sharing the recipe. Enjoy this delicious flavour curry of Udupi

Ingredients Serving: 6

  1. 1 tsp grated jaggery
  2. 2 tbsp oil
  3. 2 sprig curry leaves
  4. 2-3 tbsp chopped Coriander leaves
  5. 2 green chillies slit
  6. 2 chopped tomatoes
  7. 2-3 tbsp tamarind pulp
  8. 1 tsp turmeric
  9. 8-10 sambar onions peeled
  10. Salt to taste
  11. For pressure cooker:
  12. 1 cup Toor Dal
  13. 3 cups water
  14. 1 tsp Turmeric
  15. For Sambar Masala:
  16. 6-8 dry red chillies
  17. 1 tsp fenugreek seeds
  18. 4 tbsp grated coconut
  19. 5 tbsp corriander seeds
  20. 1.5 tsp cumin seeds
  21. 2 tbsp chana dal
  22. 2 tbsp urad dal
  23. 1 tbsp oil
  24. Vegetables:
  25. 1 carrot cubed
  26. 1 potato cubed
  27. 5-6 beans chopped
  28. 1/2 cup cucumber cubed
  29. 2-3 small brinjals chopped
  30. 1/2 cup ladies finger chopped
  31. 1 cup cubed pumpkin
  32. For Seasoning
  33. 2 tbsp ghee
  34. 1 tsp mustard seeds
  35. 1 tsp hing
  36. 2 dry red chillies
  37. 1 tsp urad dal
  38. 1/2 tsp cumin seeds
  39. 1 sprig curry leaves

Instructions

  1. Pressure cook dal with water and turmeric until completely soft. Mash dal. Keep aside
  2. In a pan, heat oil and roast all spices and coconut as mentioned under sambar masala section until brown. Allow to cool completely. Add sufficient water and grind to form paste. Keep aside
  3. In a seperate big pan, heat 2 tbsp oil, fry onions, curry leaves,green chillies. Add tomatoes and fry. Add all veggies, turmeric and roast for 5 minutes until raw smell goes away. Add salt, water , cover and cook for 10 minutes until veggies are tender. Add the ground paste to veggies. Mix well
  4. Add tamarind pulp , dal and jaggery. Mix well. Now simmer and allow to cook for 15 minutes
  5. Now heat ghee and splutter mustard seeds. Add urad dal, jeera,hing , dry red chillies. Once urad dal browns, add curry leaves. Switch off
  6. Add seasoning to sambar. Mix well. Add corriander leaves. Serve hot with rice, dosa, idli Vada etc
