ABOUT Baingan Bharta RECIPE

Baingan Bharta is a classic Punjabi Recipe that is made from smoked and chargrilled brinjals then mish-mashed and cooked along with a combination of spices. The main ingredient of the Baingan Bharta that adds to its flavours is the green chillies, ginger along with finely chopped tomatoes and coriander powder. Every region in india has their own version of Baingan Bharta and this is our family recipe for making delicious Baingan Bharta.

Ingredients Serving: 4

  1. 1 large : Baingan/Aubergine/Eggplant
  2. 2 tbsp : oil
  3. 1 tsp : Cumin seeds
  4. 1 tbsp : Garlic crushed
  5. 1 tsp : Ginger grated
  6. 1 large : onion chopped
  7. 2 medium : Tomatoes chopped
  8. 1/2 cup : fresh/frozen peas
  9. 1 tsp : Red chilli powder
  10. 1/2 tsp : Garam masala powder
  11. 1/2 tsp : Turmeric
  12. 2 tbsp : Coriander powder
  13. 1 tsp : Roasted Cumin powder
  14. 2 tsp : Crushed Kasoori methi
  15. Salt to taste

Instructions

  1. Brush eggplant with oil. Bake it in an 180°C preheated oven for 55-60 minutes or until the skin is charred and eggplant gets cooked from within turning softer .
  2. Let it cool. Peel off the skin and mash or chop charred eggplant.
  3. Heat oil in a pan, and add cumin seeds. When they start to splutter add garlic and saute for few seconds.
  4. Add ginger and saute for 30 seconds. Now add onions and sauté till they turn translucent.
  5. Now add chopped tomatoes and cook for few more minutes.
  6. Later add the dry masala powders, salt along with peas and cook for 3-4 mins.
  7. Next add the crushed kasoori methi leaves and give it a good stir.
  8. Add mashed eggplant to the cooked masala.
  9. Mix well and cook on medium heat for 7-8 minutes.
  10. Add half cup of water and simmer the gravy for another five minutes.This step can be avoided or added according to preference.
  11. Earthy flavor packed Baingan Bharta is ready to be served. Sprinkle some chopped cilantro and stir.
  12. serve hot with parathas, chapati or Naan.
