Ingredients Serving: 15

  1. Maida - 2 cups
  2. Oil - 2 tablespoon + oil for deep frying samosas
  3. Boiled potatoes - 2 large
  4. Par boiled green peas - 1/2 cup
  5. Carom seeds - 1 teaspoon
  6. Salt as per taste
  7. Chilli powder 1 tsp
  8. Turmeric Powder 1/2 tsp
  9. Amchoor powder 1 tsp
  10. Coriander Powder 1 tsp
  11. Cumin powder 1 tsp
  12. Garam Masala 1/2 tsp
  13. Coriander leaves a few
  14. Chaat masala 1 tsp
  15. Whole Cumin seeds 1 1/2 tsp
  16. Water to knead the dough

Instructions

  1. Take maida, 2 tablespoon oil, carom seeds and little salt. Rub the maida with the oil till you get bread crumb like texture.
  2. Now add very little water to make a stiff dough.
  3. Cover and rest the dough for half an hour.
  4. Now take the boiled potatoes and mash them roughly with hands.
  5. In a pan heat around 3-4 tablespoon oil and add the whole cumin seeds.
  6. Then add the mashed potatoes, par boiled green peas, salt, turmeric, coriander powder, cumin powder, chilli powder, amchoor powder and garam masala powder. Saute for a while till all the masalas get mixed into the mashed potato.
  7. Now add the chaat masala and mix well.
  8. Knead the samosa dough once again.
  9. Make big lemon size balls and roll out the dough in oval shape. (Note: Do not make it very thin)
  10. Cut the oval shaped dough into half.
  11. Make one samosa out of each half.
  12. Apply oil on the sides of each half dough.
  13. Hold it like a cone in your hand.
  14. Put two spoons of the samosa filling and press little with the back of spoon.
  15. Seal the open side by pressing the dough to give it a samosa shape.
  16. Prepare all samosas in this way.
  17. Now fry samosas on low heat. (Note: the oil should not be very hot while frying the samosas)
  18. It will take around 15 minutes for one batch of samosas to be fried.
  19. Serve samosas hot with any sauce or chutney.
