Its a very authentic old recipe of odisha, its my childhood favourite dish,till now ,its taste was mouth watering,u cannot resist it ,its a side dish, you can store the ambula rai for long time....i learn this authentic recipe to my grand mother...

Ingredients to make Ambula rai

  • dried mango (Ambula) 8 to 10 pcs
  • salt to taste
  • Turmuric pwdr half tsp
  • Musturd oil 1 tbsp
  • Panchphuran half tsp
  • Crushed aniseed(soanf) half tsp
  • Asoffotida 1 pinch
  • Dried redchilli 2
  • jaggery 100gm
  • For paste;
  • Musturd seeds 1tsp
  • cumin half tsp
  • Shredded coconut 2 tbsp
  • red chilli 2

How to make Ambula rai

  1. DRIED MANGO 8 TO 10,SALT TO TASTE, TURMURIC PWDR HALF TSP,ASOFFOTIDA 1 PINCH, DRIED RED CHILLI 2, PANCH PHURAN HALF TSP, CRUSHED ANISEED HALF TSP, MUSTURD OIL 1 TBSP,MUSTURD SEEDS 1TSP, CUMIN SEED HALF TSP, REDCHILLI 2, SHREDED COCONUT 2 TBSP,JAGGERY 100 GM
  2. NOW HEAT A WOK ADD MUSTURD OIL ,AFTER 1 MIN ADD PANCHPHURAN,REDCHILLI,CRUSHED ANISEED,& ASOFFOTIDA LET THEM SPLUTTER,
  3. WHEN IT SPLUTTER THEN ADD SOAK DRIED MANGO WITH WATER,
  4. NOW MAKE SMOOTH PASTE OF MUSTURD SEEDS, CUMIN SEED,REDCHILLI & COCONUT
  5. ADD TURMURIC PWDR & SALT INTO IT & GIVE A BOIL,
  6. WHEN A BOIL IS COME THEN ADD MUSTURD PASTE &.MIX
  7. AFTER 2 TO 3 MINS,ADD JAGGERY & COOK IN LOW FLAME FOR 5 MINS
  8. AFTER 5 MINS ITS DONE,NOW SWITCH OF THE FLAME,ITS GAVE A BEAUTIFUL AROMA & TASTE WAS MOUTH WATERING,
