ABOUT Thecha RECIPE

Thecha is a a marathi condiment sometimes referred to as kharda in many parts of Maharashtra. This is a part of farmer's humble meal. Paired with bhakri (sorghum roti) it makes up a farmers meal. We like it as an accompaniment in our rustic meal of pithle, bhaat and bhakri.

Ingredients Serving: 8

  1. 25 Green chillies
  2. 8 Garlic cloves
  3. Chopped coriander as much you like
  4. 1/4 tsp methi seeds
  5. A pinch Asafoetida
  6. 1/2 tsp Mustard
  7. 1/4 tsp Turmeric
  8. Salt and sugar/jaggery for seasoning
  9. 1 tbsp oil

Instructions

  1. Wash the green chillies and dry. Chop off the stems. Set aside.
  2. In a pan add in the oil. Temper with mustard, methi seeds, asafoetida and turmeric.
  3. Add the chillies and garlic. Saute till slightly softened. Keep aside to cool.
  4. Crush or Grind roughly the salt, jaggery and the cooked green chillies. Mix together with coriander.
  5. Serve with bhakri or roti.
  6. This thecha can be stored in a refridgerator, in an airtight container for a week.
