SPICY EGGPLANT DRY FRY-BAINGAN FRY-BRINJAL SIDEDISH-HOW TO MAKE BEGUN BHAJA

Ingredients to make SPICY EGGPLANT DRY FRY-BAINGAN FRY-BRINJAL SIDEDISH-HOW TO MAKE BEGUN BHAJA

  • Eggplant - 1 (big size brinjal)
  • salt - 1 tsp
  • chilly powder - 1 tsp
  • turmeric powder – 1 tsp
  • oil - 2 tbsp

How to make SPICY EGGPLANT DRY FRY-BAINGAN FRY-BRINJAL SIDEDISH-HOW TO MAKE BEGUN BHAJA

  1. Take a big eggplant and cut it into half inch thick rounds. Add salt, red chilli powder and turmeric. Coat the brinjal rounds with the masala well using your hands.
  2. Add oil into the frying pan so that we could shallow fry the masala brinjal rounds. Fry them till one side of the brinjal rounds soaks up the oil and is well fried.
  3. Now turn the brinjal rounds onto the other side, cover with a lid and cook them on low flame for 2 minutes till the other side too is cooked soft.
  4. Again, take the lid off and turn the brinjal rounds onto the other side and cook again on low flame for two minutes without the lid.
  5. The brinjal rounds are done and can be had hot just like that or as a side dish with dal or sambar and chawal.
