About SPICY GARLIC FRIED CHICKEN Recipe

SPICY GARLIC FRIED CHICKEN is stir-fried with vegetables and a sweet, sour, spicy sauce. It is based on a Chinese dish but modified to suit our tastes, with Indian ingredients. In my version, I infuse the cooking oil with red chili, garlic, cabbage and onions to make the lightly fried chicken spicy, garlicky, and tasty. And if you want a non-spicy version, just leave out the spicy stuff. This dish is fast to make: it fries quickly because it’s made with boneless pieces of chicken.

SPICY GARLIC FRIED CHICKEN

Ingredients to make SPICY GARLIC FRIED CHICKEN

  • 500 gms chicken, cut into bite size small pieces
  • 1 teaspoon minced ginger
  • 2 teaspoons soy sauce
  • 1 teaspoon ground black pepper
  • ½ cup corn flour
  • ½ cup rice flour
  • 1 egg
  • Spicy garlic- and cabbage-infused oil:
  • 1 cup cooking oil
  • ½ cup thinly shredded cabbage
  • 15 garlic cloves, cut into halves
  • ½ teaspoon salt
  • ½ teaspoon chilli powder
  • To prepare the sauce:
  • 1 big onion sliced
  • 5 green chillies cut into halves
  • 1 tablespoon soy sauce
  • 2 tablespoons water
  • 1 tablespoon rice flour

How to make SPICY GARLIC FRIED CHICKEN

  1. Prep the chicken Combine the chicken, minced ginger, soy sauce, and ground black pepper in a bowl. Mix well with a spoon and let sit for 10 to 20 minutes. Add the egg and ½ cup corn flour and rice flour. Mix well by hand.
  2. Fry the chicken Heat up 1 cup of cooking oil in a frying pan.
  3. When the oil is heated, deep fry the chicken. When the bottom of a piece of chicken turns crunchy and light golden brown, turn it over.
  4. . It’s ok if the pan is crowded with chicken, but split the chicken pieces if they get stuck together. Keep rotating the chicken pieces and turning them over so they’re cooked evenly, about 5 minutes.
  5. Take them out and strain, and turn off the heat.
  6. Prep the spicy garlic fried chicken Heat up the same pan with the same oil we used to fry the chicken. When the oil is heated, lower the flame to medium and add the garlic and cabbage.
  7. . Stir them for a couple of minutes until the garlic and cabbage turn light golden brown and crispy.
  8. Take the garlic and cabbage out and put them in a small cup. Then in the same oil, add the onion, green chilies.
  9. Stir over medium flame until the onion starts turning crispy for about 2 to 3 minutes. Add the soy sauce and rice flour mixed with water and stir it for about 20 to 30 seconds until it’s sizzling.
  10. Add the fried chicken, fried cabbage and garlic, and a ½ spoon of sugar. Stir and mix to coat the chicken. Serve right away with noodles or rice. Goes well with chilled drinks :)
