Ingredients Serving: 3

  1. Red amaranth leaves chopped 1 cup
  2. Water 1/2 cup
  3. Salty tomato jam or tomato puree 2 tsp
  4. Salt to taste
  5. Chilli powder 1 tsp
  6. Grated coconut handful
  7. Cooking oil 1 tsp
  8. Mustard seeds 1 tsp
  9. Urad dal 1 tsp
  10. Red chilli 1
  11. Curry leaves few

Instructions

  1. HEAT OIL, ADD MUSTARD SEEDS, ALLOW TO CRACKLE
  2. ADD URAD DAL AND FRY TILL GOLDEN BROWN
  3. CURRY LEAVES
  4. CHOPPED AMARANTH LEAVES
  5. SOME WATER
  6. SALT, CHILLI POWDER
  7. MIX WELL, COVER AND COOK TILL TENDER IN MEDIUM FLAME
  8. CHECK THE COOKNESS, ADD TOMATO SALTY JAM
  9. WHEN THE WATER EVAPORATED, ADD GRATED COCONUT
  10. TURN OFF THE FLAME AND SERVE
