This is a traditional vegetarian Bengali dish made with homemade chhena or cottage cheese
I will surely try this.
Boil the milk and as soon as the first boil comes add vinegar or lemon juice
As soon as milk curdles strain the water and hold the chhena under running water for 2mins
Now keep it in the strainer for sometime.
Now mash the chhena with your Palm till it becomes smooth and your Palm feels oily.
Add salt,sugar and flour and mix nicely
Now make small equal size balls and flatten slightly with your palm
Heat oil preferably mustard oil and add the bay leaf
Then add cumin seeds
As it splutters add the tomato puree
Cook till the raw smell goes
Make a paste with turmeric powder, cumin powder, ginger paste and red chilli powder with little water.
Add this paste now
Add salt and sugar
Add the fried potatoes
Cook till oil floats
On the other hand shallow fry the koftas
Add those fried koftas in the gravy
Do not cook for long because the koftas are very soft and may break
Sprinkle some garam Masala powder from top
Add some ghee or clarified butter
Serve with steamed rice
