Chhanar dalna or cottage cheese kofta curry

ABOUT Chhanar dalna or cottage cheese kofta curry RECIPE

This is a traditional vegetarian Bengali dish made with homemade chhena or cottage cheese

Ingredients Serving: 2

  1. Full cream milk 1/2 ltr
  2. Vinegar or lemon juice
  3. For gravy :cumin seeds whole
  4. 1 bay leaf
  5. Cumin powder 1tbsp
  6. 1 tomato puree
  7. Ginger paste 1 tsp
  8. Red chilli powder 1/2 tsp
  9. Half I or turmeric powder 1/2 tsp
  10. Salt to taste
  11. Sugar 1tsp
  12. Garam Masala powder
  13. For kofta:1tbsp flour
  14. Salt
  15. Sugar
  16. Oil for cooking
  17. Cubed and fried potato

Instructions

  1. Boil the milk and as soon as the first boil comes add vinegar or lemon juice
  2. As soon as milk curdles strain the water and hold the chhena under running water for 2mins
  3. Now keep it in the strainer for sometime.
  4. Now mash the chhena with your Palm till it becomes smooth and your Palm feels oily.
  5. Add salt,sugar and flour and mix nicely
  6. Now make small equal size balls and flatten slightly with your palm
  7. Heat oil preferably mustard oil and add the bay leaf
  8. Then add cumin seeds
  9. As it splutters add the tomato puree
  10. Cook till the raw smell goes
  11. Make a paste with turmeric powder, cumin powder, ginger paste and red chilli powder with little water.
  12. Add this paste now
  13. Add salt and sugar
  14. Add the fried potatoes
  15. Cook till oil floats
  16. On the other hand shallow fry the koftas
  17. Add those fried koftas in the gravy
  18. Do not cook for long because the koftas are very soft and may break
  19. Sprinkle some garam Masala powder from top
  20. Add some ghee or clarified butter
  21. Serve with steamed rice
