About TOOR CURRY (AMTI) Recipe

It is made up of fresh Whole Green Toor Beans with some tadka of Maharashtrian Amti. Tastes best with Rice and Chapati.

TOOR CURRY (AMTI)

Ingredients to make TOOR CURRY (AMTI)

  • Whole Green Toor Beans – 1 cup
  • Chopped onions – ½ cup
  • Chopped tomatoes – ¼ cup
  • water – 1 ½ cup
  • coriander Leaves – ½ cup
  • garlic Cloves – 5 to 6
  • Dry red chillies – 2
  • mustard seeds / Rai – ½ tsp
  • cumin Seeds / Jeera – ½ tsp
  • Asafetida / hing – ¼ tsp
  • red chilli Powder / Lal Mirchi – 1 tsp
  • coriander Powder / Dhaniya – ¼ tsp
  • Garam masala – ¼ tsp
  • turmeric Powder / Haldi – ¼ tsp
  • salt – ½ tsp
  • oil – 4 tablespoon

How to make TOOR CURRY (AMTI)

  1. In a preheated pan take 2 tablespoon of Oil then add ½ tsp of Cumin Seeds and 1 cup of whole green Toor beans followed by 5 to 6 Garlic Cloves and roast them for 5 min.
  2. Then grind the roasted beans mixture into the grinder and keep aside.
  3. Then in same pan take 2 tablespoon of Oil again, then add ½ tsp of Mustard Seeds, ¼ tsp of Hing, 2 dry Red Chillies, 1/3 tsp of Red Chilli Powder and ¼ tsp of Turmeric Powder and mix well.
  4. Then add ¼ cup of chopped Onions and sauté for 1 Min then add ¼ cup of chopped Tomatoes and cook until Tomatoes get mashy.
  5. Then add grinded beans mixture and mix well.
  6. Furthermore, add ½ tsp of Red Chilli Powder, ¼ tsp of Garam Masala and Coriander Powder followed by ½ tsp of Salt.
  7. Then add 1 ½ cup of Water and cook the curry for 5 to 8 Min on medium flame.
  8. Lastly add freshly chopped Coriander Leaves and serve hot with Roti or Rice.

My Tip:

Adding Red Chilli Powder and Turmeric Powder into the Oil to get good color of curry.
