ABOUT TOOR CURRY (AMTI) RECIPE

It is made up of fresh Whole Green Toor Beans with some tadka of Maharashtrian Amti. Tastes best with Rice and Chapati.

Ingredients Serving: 4

  1. Whole Green Toor Beans – 1 cup
  2. Chopped Onions – ½ cup
  3. Chopped Tomatoes – ¼ cup
  4. Water – 1 ½ cup
  5. Coriander Leaves – ½ cup
  6. Garlic Cloves – 5 to 6
  7. Dry Red Chillies – 2
  8. Mustard Seeds / Rai – ½ tsp
  9. Cumin Seeds / Jeera – ½ tsp
  10. Asafetida / Hing – ¼ tsp
  11. Red Chilli Powder / Lal Mirchi – 1 tsp
  12. Coriander Powder / Dhaniya – ¼ tsp
  13. Garam Masala – ¼ tsp
  14. Turmeric Powder / Haldi – ¼ tsp
  15. Salt – ½ tsp
  16. Oil – 4 tablespoon

Instructions

  1. In a preheated pan take 2 tablespoon of Oil then add ½ tsp of Cumin Seeds and 1 cup of whole green Toor beans followed by 5 to 6 Garlic Cloves and roast them for 5 min.
  2. Then grind the roasted beans mixture into the grinder and keep aside.
  3. Then in same pan take 2 tablespoon of Oil again, then add ½ tsp of Mustard Seeds, ¼ tsp of Hing, 2 dry Red Chillies, 1/3 tsp of Red Chilli Powder and ¼ tsp of Turmeric Powder and mix well.
  4. Then add ¼ cup of chopped Onions and sauté for 1 Min then add ¼ cup of chopped Tomatoes and cook until Tomatoes get mashy.
  5. Then add grinded beans mixture and mix well.
  6. Furthermore, add ½ tsp of Red Chilli Powder, ¼ tsp of Garam Masala and Coriander Powder followed by ½ tsp of Salt.
  7. Then add 1 ½ cup of Water and cook the curry for 5 to 8 Min on medium flame.
  8. Lastly add freshly chopped Coriander Leaves and serve hot with Roti or Rice.
