Gravy takatak(paneer~cheese masala)

Ingredients to make Gravy takatak(paneer~cheese masala)

  • oil 4 tbsp
  • butter 4 tbsp
  • jeera 1 tsp
  • hing a pinch
  • 4 medium size onions
  • 4 medium size tomatoes
  • ggc paste 1 tbsp
  • cashews 6 to 8 soaked in warm water
  • kasoori methi 2 tsps
  • red chilli pwd 2 tsps
  • coriander pwd 2 tsps
  • haldi 1 tsp
  • salt to taste
  • kitchen king masala 1 tsp
  • garam masala a pinch
  • kashmiri red chilli powder 2tsps
  • coriander leaves to garnish
  • grated paneer and cheese to garnish

How to make Gravy takatak(paneer~cheese masala)

  1. First of all blanch onions into hot water.(cut each onions into 4 parts and blanch)
  2. Similarly poke tomatoes with knife and blanch.
  3. Grind both onions and tomatoes individually and prepare both pastes.
  4. Heat 2 tbsp oil + 2 tbsp butter in heavy bottomed pan. (Reserve remaining oil and butter for tadka)
  5. Add jeera to oil.
  6. when jeera crackles add hing.
  7. Now add onion paste and cook till golden.
  8. Add ggc paste.
  9. once onions are golden add salt,haldi ,red chilli pwd, coriander pwd.
  10. Stir and add tomatoes paste.
  11. Cook this till gravy stands on oil.
  12. Add kitchen king masala and garam masala.
  13. Mash some kasoori methi with hands and add to it.
  14. Now add kaju paste and some water to avoid sticking at bottom.
  15. At this stage u can add paneer,cheese,veggies as per your choice.
  16. (I have added paneer 200 gms and50 gms cheese cubes which I marinated in 1 spoon curd,kashmiri red chilli pwd 1tsp and pinch garam masala )
  17. Cook for few mins.
  18. Your gravy is ready.
  19. Now tadka us main to give restaurant style effect ,taste and colour.
  20. Heat remaining oil and butter together.
  21. Heat till smoke point add Kashmiri red chilli pwd and gravy .

My Tip:

To add more creaminess to gravy fresh cream 2 tbsp can also be added.
