ABOUT Egg drop - red capsicum bites curry RECIPE

Eggs can be cooked in various versions and this is curry is my favourite version . Easy peasy delicious curry in few minutes with very less , regular kitchen ingredients

Ingredients Serving: 3

Eggs 4
Onion 1 big sized finely chopped
Tomatoes 4 pureed
Ginger garlic paste 1 teaspoon
Salt as taste
Turmeric powder 1/2 teaspoon
Cumin powder 1/4 teaspoon
Kashmiri red chilli powder 1 tablespoon
Coriander powder 1 teaspoon
Black pepper powder to sprinkle
Red capsicum 1 big dived into bite sizes
oil 2 1/2 tablespoons
Cilantros for garnishing

Instructions

In a wok , heat 2 tablespoons oil , fry ginger garlic paste , sauté onions.
Add salt . Pour the tomato purée into the wok , Let it cook well .
Add all the dry powders and cover the wok for 5 minutes . Let the curry cook till it oozes oil on top and sides . Do create segments in the curry .
Now break the eggs and pour the eggs into the segments . Sprinkle salt and pepper powder and cover the wok for few minutes till the eggs get completely cooked .
In another pan , heat oil , gently fry the capsicum bites . Toss and fry till they turn crunchy . Switch off the stove .
Now add the capsicum crunchy bites on top of the egg curry . While serving , Mix .
