Chicken Angaara is my absolute favorite. Its an easy chicken recipe and it’s smoky flavor and aroma makes it distinct from most chicken gravies

Ingredients Serving: 2

  1. Chicken cut into pieces on the bone 500 grams
  2. Yogurt 1/2 cup
  3. Ginger-garlic paste 1 tablespoon
  4. Turmeric powder 1/4 teaspoon
  5. Kashmiri red chilli powder 1 teaspoon
  6. Whole red chilli 4
  7. Coriander seeds 1 Tablespoon
  8. Cumin seeds 1 tablespoon
  9. black pepper corn 1 teaspoon
  10. Salt to taste
  11. Oil ¼ cup
  12. Onion 1 medium (finely chopped)
  13. Tomato puree 1/2cup
  14. Almond and cashew paste 3 teaspoons
  15. Ghee 1 teaspoon
  16. Fresh coriander leaves chopped 1 tablespoon
  17. Thin strips of ginger for garnishing
  18. Raw Almond and cashews for garnishing
  19. coal 2 piece

Instructions

  1. Dry roast whole red chilli, coriander seeds, cumin seeds, black pepper corn, on high flame till changes colour then crush it coarsely, keep aside.
  2. Now to prepare marinate put chicken pieces in a bowl, add yogurt, ginger-garlic paste, turmeric powder, Kashmiri red chilli powder, dry roasted & crushed masala and salt and mix well.
  3. Heat two pieces of coal on direct flame till very hot.
  4. Place the hot coal pieces in a steel katori and place the katori in the centre of the marinate and cover the pan for 3 hours
  5. Heat oil 1/2 cup add onions fry on high flame till gets light golden. Add tomato puree to the pan, mix and cook for few minutes.
  6. Add marinated chicken cook on medium flame, add half cup of water and stir to mix, add almond and cashew paste, mix well and cook till the chicken is fully cooked
  7. Garnish with ginger strips, almonds, cashew and coriander leaves and serve hot.
