ABOUT Mangalore Style Traditional Veggies Curry RECIPE

Veggies curry is so healthy and tasty. It is flavourful havyaka cuisine, without onion, garlic and toor dal.

Ingredients Serving: 8

  1. Drumstick chopped 1/4 kg
  2. Carrot chopped 1/4 kg
  3. Beans 1/4 kg
  4. Radish peeled and chopped 1/4 kg
  5. Water 1 ltr to cook
  6. Salt to taste
  7. 2 gooseberry sized tamarind soaked water 1 cup
  8. For masala..
  9. 2 tsp coconut oil
  10. Water 2 cup
  11. Red chilli 8-9
  12. Cardamom seeds 1 1/2 tbs
  13. Jeera I tsp
  14. Fenugreek seeds 1/2 tsp
  15. Urad dal 1/2 tbs
  16. Asafoetida a pinch
  17. Turmeric powder a pinch
  18. Curry leaves 3-5
  19. For seasoning..
  20. Mustard seeds 1 tsp
  21. Cooking oil 1 tsp
  22. Red chilli 1
  23. Curry leaves few

Instructions

  1. Wash and chop all the veggies.
  2. Boil the tamarind soaked water with a ltr of water.
  3. When it starts boiling, add the veggies.
  4. Add salt.
  5. Stir once. .
  6. Cover the lid and cook for 7 minutes in high flame.
  7. Open the lid and check the cookness.
  8. Heat oil and fry all the spices in low flame, till good aroma.
  9. Add asafoetida, saute once.
  10. Turn off the flame, add turmeric powder and saute well.
  11. Add curry leaves.
  12. Allow it to cool.
  13. Grind smoothly by adding water and coconut.
  14. Pour the ground masala into cooked veggies.
  15. Bring it to boil, if necessary add water.
  16. Stir often, allow it to boil in low flame for 7-8 minutes.
  17. Prepare seasoning.
  18. Pour into a vessel.
  19. Add curry leaves.
  20. Close the lid for 5 more minutes.
  21. Open the lid, mix well and serve with rice, idli and so on.
