Instant Lemon Pickle

Ingredients to make Instant Lemon Pickle

  • lemons 10 (Approx 400 grms)
  • 1 1/2 cups sugar
  • 1/2 cup salt
  • 1/2 cup red chillie powder

How to make Instant Lemon Pickle

  1. WASH AND PATDRY THE LEMONS(PREFER SPOTLESS LEMONS).
  2. CUT THEM INTO 8 PCS EACH
  3. REMOVE ALL THE SEEDS
  4. PUT THE LEMONS IN A PAN
  5. ADD 4 CUPS WATER IN PRESSURE COOKER & PLACE THE LEMON VESSEL IN THE COOKER
  6. COVER WITH LID SO THE WATER FROM THE STEAM DOESN'T FALL ON THE LEMONS
  7. PRESSURE COOK FOR 1 WHISTLE & THEN LOWER THE FLAME & COOK FOR ANOTHER 10- 12 MINS.ONCE COOL REMOVE
  8. LEMONS ARE NICELY COOKED
  9. STRAIN THE LEMON PIECES & COLLECT THE LEMON JUICE IN A PAN
  10. DO NOT ADD ANY WATER IN THE JUICE.JUST ADD 1 1/2 CUPS SUGAR & KEEP STIRRING
  11. COOK THE SYRUP TILL THE SUGAR DISSOLVES & U C BUBBLES.AS THE JUICE IS LESS IT WILL TAKE 5 TO 7 MIN
  12. THE SYRUP SHOULD ATTAIN THIS CONSISTENCY(THICK)
  13. ADD 1/2 CUP SALT
  14. ADD 1/2 CUP CHILLIE POWDER
  15. STIR WELL
  16. NOW ADD THE LEMONS, CLOSE THE STOVE & MIX THEM IN THE SYRUP COMPLETY
  17. STIR GENTLY
  18. PICKLE IS READY.LET IT COOL COMPLETELY & THEN TRANSFER IN STERILIZED JARS & REFRIGRATE
