Pav bhaji is the most popular street food of Maharashtra, which is now widely loved by people all over India.

Peel the potatoes, bottle gourd and chop them. Grate the carrot. Chop the capsicum, cabbage & cauliflower into small pieces.
Pressure cook all the vegetable (except capsicum) along with 1.5 cups of water for 4-5 whistles. When cool, then mash the vegetables using a potato masher.
Heat oil in a pan, add butter followed by chopped capsicum. Saute on medium heat.
Add grated ginger & tomato puree. Cook on medium heat, covered.
Add 1 tbsp of butter, boiled green peas along with all the dry spices, keep stirring till the oil starts leaving from the sides.
Add in the mashed vegetables & mix it well. Adjust the consistency. Cover & let it simmer on a low heat for 10 minutes.
Roast the pav till its crisp and serve with the hot bhaji.
