ABOUT Sicilian Pesto RECIPE

One of the best and easiest way to use up abundance of basil is by making Pesto, it is the most surest way to guzzle up the basil. This recipe has been adapted from My Recipes.

Ingredients Serving: 20

  1. 1/4 cup of walnuts
  2. 4 cups of loosely packed fresh basil leaves
  3. 1/4 cup of olive oil
  4. 1/2 teaspoon of salt
  5. 1/4 teaspoon of freshly ground black pepper
  6. 1/8 teaspoon of crushed red pepper
  7. 1/2 cup of parmesan cheese
  8. 2 cups of chopped seeded tomatoes, drained

Instructions

  1. Heat a small pan over medium heat. Add walnuts to the pan and cook for 4-5 minutes or until they are lightly toasted while stirring constantly. Then remove from the pan.
  2. Transfer nuts to a food processor and process until its minced. Add basil, oil, salt, peppers and process until its blended while scraping the sides occasionally. Add cheese and process until smooth.
  3. Spoon into a bowl; fold in tomatoes and serve as you like.
