ABOUT Easter Simnel Cake RECIPE

A very typical English Cake, it keeps very week and can be made weeks before Easter

Ingredients Serving: 10

  1. ½ cup candied cherries
  2. 3 cups dried fruit such as cranberries, raisins, sultanas
  3. 100 grams butter
  4. 1 cup sugar
  5. Zest of 1 lemon
  6. 1½ cups all-purpose flour
  7. 1 teaspoon baking powder
  8. ½ teaspoon ground cinnamon
  9. ¼ teaspoon ground ginger
  10. ¼ cup almond meal
  11. 3 eggs
  12. 2 tablespoons milk
  13. For the topping
  14. Store bought marzipan
  15. 3 tblsp marmalade

Instructions

  1. In a large bowl, measure out the flour, almond meal, ground ginger, cinnamon, salt and baking powder. Keep aside
  2. In a separate bowl cream together the butter and sugar as well as lemon zest and add in the eggs until light. Stir in the flour mix and add in the dried fruits and the milk. Mix together until combined
  3. Pour into a greased tin. Bake for 40 minutes in a pre-heated oven at 180 degree centigrade.
  4. Once the cake is cool, spread the marmalade on top of it. Roll out the marzipan and let it sit on top of the cake. Roll out little balls of marzipan and with the help of additional marmalade let it sit on top of the cake in neat circles.
