Raj Kachori

Ingredients to make Raj Kachori

  • 1 cup maida
  • 1/2 cup suji
  • salt to taste
  • oil to fry
  • coriander leaves 1 cup
  • pomegranate 1 cup
  • Sev bhujiya 1 cup
  • Green chutney 1 cup
  • Chaat masala 2 tsp
  • Sweet chutney 1 cup
  • cumin powder 2 tbsp
  • red chilli powder 2 tbsp
  • curd 1 cup
  • dahi pakodi 1 cup
  • Potato boiled 1 cup

How to make Raj Kachori

  1. TAKE 1 CUP FLOUR, ADD 1/2 CUP SEMOLINA, 1 TSP OIL
  2. ADD 1 TSP SALT, 1/4 TSP BAKING SODA, MIX
  3. ADD SUFFICIENT WATER, KNEAD INTO A DOUGH
  4. COVER & KEEP ASIDE FOR 30 MINS
  5. KNEAD THE DOUGH AGAIN, MAKE SMALL BALLS
  6. COVER AGAIN & KEEP ASIDE FOR 10 MINS
  7. ROLL INTO POORIS
  8. SLIDE INTO HOT OIL, PRESS DOWN LIGHTLY TO PUFF IT UP
  9. FRY UNTIL GOLDEN BROWN & CRISP ON MEDIUM HEAT
  10. SET ASIDE TO COOL DOWN
  11. RAJKACHORIS ARE READY, LET'S STUFF THEM UP
  12. BREAK THE KACHORI FROM THE CENTRE, ADD 2 TSP EACH OF BOILED CHICKPEAS & POTATO CHUNKS
  13. ADD 1 TSP CHOPPED ONIONS, 2 MOONG DAL VADAS SOAKED IN CURD
  14. ADD 2 TSP EACH OF GREEN CHUTNEY & TAMARIND CHUTNEY
  15. ADD 2 TBSP SWEET WHIPPED CURD, SOME POMEGRANATE SEEDS
  16. SPRINKLE 1/2 TSP EACH OF CHAT MASALA, RED CHILLI & ROASTED CUMIN POWDERS
  17. GARNISH WITH A GENEROUS AMOUNT OF SEV & FRESH CORIANDER
  18. SUMPTUOUS & LIP SMACKING RAJ KACHORI IS READY TO SERVE
