Roasted brinjal mix

Ingredients Serving: 2

  1. Green Brinjals 3 big size
  2. Onions 4 medium size
  3. Tomatoes 2 big size
  4. Green peas 1 small bowl
  5. Coriander finely chopped
  6. Red chilli powder 1tsp
  7. Turmeric powder 1/4 tsp
  8. Salt to taste
  9. 1tbsp Oil
  10. 1/2 tsp mustard seeds

Instructions

  1. Apply oil to the washed brinjals and keep them on the gas burner for roasting.
  2. Chop onions finely and keep aside.
  3. Chop tomatoes and keep aside.
  4. Take a wok and pour oil in it and heat it.
  5. Add mustard seeds to it and let it crackle.
  6. Then add chopped onions and green peas.
  7. Once onions have turned golden brown and green peas are cooked then add tomatoes.
  8. Add salt to taste and let tomatoes cook till they turn soft.
  9. In the mean time brinjals are roasted finely .You can easily peel the skin of brinjal then keep aside peeled brinjals. Mash these peeled brinjals to a paste consistency.
  10. Now your onion peas and tomatoes are cooked.
  11. Add red chilli powder and turmeric powder.
  12. Mix well everything and then add mashed brinjals to cooked onions and tomatoes.
  13. Mix everything and let it steam up for 2 mins and your baingan bharta is ready.
  14. Put this bharta (roasted brinjals mix ) in a dish and garnish it with coriander leaves.
