ABOUT Muhammara (Red Capsicum Walnut Spread) RECIPE

This is a yummy condiment from Syria. It's made with roasted red capsicum, walnuts and dry breadcrumbs. It is yummy with chips or pita bread or even as a sandwich spread.

Ingredients Serving: 8

  1. Red Capsicum - 2 Medium
  2. Cumin Seeds - 1tsp
  3. Coriander seeds - 1tsp
  4. Dry Breadcrumbs - 1/3cup (lightly toast white or wholewheat bread and grind to crumbs)
  5. Walnuts - 1/3cup, chopped
  6. Garlic - 2~3 cloves, finely minced
  7. Lemon juice - 1~2tsp
  8. Red pepper flakes - 1/2tsp (or use a pinch of red chili powder)
  9. Olive oil - 2tbsp
  10. Salt - to taste

Instructions

  1. Roast capsicum on the stove until blackened all over. Place them in a bowl and cover for 10~15 minutes. Then remove the skin and discard the seeds. Coarsely chop them.
  2. Dry roast cumin and coriander seeds until fragrant, cool and grind to a fine powder.
  3. In a blender or food processor, pulse together bread crumbs and walnuts into coarse crumbs.
  4. Add the chopped peppers, ground spices, garlic, lemon juice, pepper flakes, sea salt and pulse into a chunky paste.
  5. Add olive oil and blend until smooth paste is formed. Serve at room temperature or chill for 30 minutes for the flavors to mingle.
