Ingredients Serving: 10

  1. Sooji /Bombay Rava 3 cups
  2. Dahi / yogurt 1 cup
  3. Big sized onion 1 finely chopped
  4. Salt 1 teaspoon
  5. Chaat masala 1/2 teaspoon
  6. Sesame oil 1/2 cup
  7. Green chilli 1 finely chopped
  8. Water 2 large glasses. Adjust according to your measurement .

Instructions

  1. Sooji 3 cups.Yogurt 1cup.Big onion1.Green chilli 1 .Salt 1tsp.Chaat masala 1/2tsp.Sesame oil1/2cup
  2. Water 2 large glasses. In a wide , deep bowl, add the measured sooji .
  3. Add a cup of yogurt /Dahi to the sooji .
  4. Mix the sooji and Dahi first . Now add water to the crumbled mixture and mix into a smooth batter .
  5. The batter should be in a pouring consistency . Not too runny nor too tight to scoop .
  6. Add the salt and chaat masala to the batter .
  7. Add the finely chopped green chilli. You could add extra chillies as per your taste .
  8. Add the finely chopped onion to the batter . Mix well . Let this batter rest for about 1 hour.
  9. After an hour , the batter is ready for porous , thin, perfect Uthappas .
  10. Heat a griddle.Pour a ladle full of batter to the centre of the hot griddle.
  11. Spread into a thin Uthappa . Smear oil over the sides for a crispy evenly cooked uthappas .
  12. Flip the other side and for 2 minutes . Maintain a low -medium flame for a soft , crunchy texture .
  13. The outer side turns golden brown while tiny brown spots pop up on the inner side of the Uthappas.
  14. Instant , crispy Dahi Uthappas are ready ! Serve with chutneys / podis .
