Quick yummy Uthappas using a fresh no fermented homemade batter . Instant results using very less ingredients . It’s interesting . Isn’t ?
Sooji 3 cups.Yogurt 1cup.Big onion1.Green chilli 1 .Salt 1tsp.Chaat masala 1/2tsp.Sesame oil1/2cup
Water 2 large glasses. In a wide , deep bowl, add the measured sooji .
Add a cup of yogurt /Dahi to the sooji .
Mix the sooji and Dahi first . Now add water to the crumbled mixture and mix into a smooth batter .
The batter should be in a pouring consistency . Not too runny nor too tight to scoop .
Add the salt and chaat masala to the batter .
Add the finely chopped green chilli. You could add extra chillies as per your taste .
Add the finely chopped onion to the batter . Mix well . Let this batter rest for about 1 hour.
After an hour , the batter is ready for porous , thin, perfect Uthappas .
Heat a griddle.Pour a ladle full of batter to the centre of the hot griddle.
Spread into a thin Uthappa . Smear oil over the sides for a crispy evenly cooked uthappas .
Flip the other side and for 2 minutes . Maintain a low -medium flame for a soft , crunchy texture .
The outer side turns golden brown while tiny brown spots pop up on the inner side of the Uthappas.
Instant , crispy Dahi Uthappas are ready ! Serve with chutneys / podis .
