Ingredients Serving: 5

  1. Sooji (Semolina) 1 cup
  2. Sugar - 3/4 cup
  3. Oil/ghee - 1/2 cup
  4. Yellow food colour - a pinch
  5. Cardamom powder - 1 tea spoon
  6. Almond slivers - to garnish
  7. Water - as required

Instructions

  1. Heat 2 table spoon oil/ghee in a pan. Add sooji and roast over a slow flame.
  2. Add sugar and the rest of oil/ghee.
  3. Add hot water to the roasted sooji.
  4. Now add the cardamom powder and a pinch of yellow food colour.
  5. Cook till the sooji starts leaving the pan.
  6. Grease a plate with ghee and pour the sooji mixture.
  7. Level it with a spatula.
  8. Press almond slivers on top of sooji.
  9. When it comes to room temperature, slice the sooji into square pieces.
  10. Delicious rawa kesari is ready.
