ABOUT Fish and Chips RECIPE

Beer batter fried crispy fish with chips.

Ingredients Serving: 10

  1. Tilapia fish fillets - 10 (2" strips)
  2. Maida - 2 cups
  3. Beer - 1/2 cup
  4. Salt
  5. Black pepper powder - 1/2 teaspoon
  6. Garlic powder - 1 teaspoon
  7. Cajun seasoning - 1 teaspoon
  8. Lemon juice - 1 table spoon
  9. Corn starch - 1/2 cup
  10. Ice cubes - few cubes
  11. Oil for fying
  12. Potato cut into french fry strips
  13. Water
  14. Tartar sauce
  15. Onion slices
  16. Lemon rings
  17. Mint leaves (optional) - for garnish

Instructions

  1. For fish:
  2. Marinate fish with salt, pepper powder, garlic powder, cajun seasoning and lemon juice and keep inside the refrigerator for 1 hour.
  3. Make a batter with maida, cornstarch, beer, water and salt.
  4. Tip: Put few ice cubes into the batter. It will help to make the batter crispy. (Adjust batter by adding more maida if ice cubes start leaving water). Let the batter rest covered for 2 hours.
  5. Dredge fish in dry flour and dip in batter.
  6. Deep fry batter coated fish in high flame till golden brown.
  7. Serve immediately with french fries, sauce and salad.
  8. For french fries:
  9. Blanch french fries in boiling water & salt for 1 minute.
  10. Drain french fries and deep fry in high flame till golden brown.
