Ingredients Serving: 4

  1. For batter
  2. 1 cup all purpose flour
  3. 1 tsp Salt
  4. Water to a thick batter
  5. For Outer Layer
  6. 4 boiled and mashed potaoes
  7. 1 tbsp oil
  8. 1/2 tsp mustard seeds
  9. Pinch of hing
  10. Pinch of haldi
  11. 4-5 green chiilies crushed
  12. handful corriender leaves
  13. For middle layer
  14. 2 grated beetroot
  15. 1/4 tsp Salt
  16. 1/4 tsp pepper powder
  17. 1/4 tsp chaat masala
  18. For inner white layer
  19. 100,gram paneer
  20. 2 Green chillies finely chopped
  21. Salt to taste
  22. 1/2 tsp pepoer powder
  23. 1/4 tsp chaat masala
  24. 1/4 cup dry fruits
  25. Rusk crumbs for coating
  26. Oil for frying

Instructions

  1. First we have to make a thick lump free batter by adding water and salt in maida and keep aside
  2. Now in a pan heat oil and add mustard seeds to splutter ,add mashed potatoes , hing , green chillies , salt and cortiender leaves and keep aside to cool
  3. For second middle layer mix salt , pepper powder and chaat masala in grated beetroot
  4. Add salt , pepper green chillies and chaat masala in grated paneer , and inner layer is ready
  5. Now take a small portion of potato mixture and flatten with hands, then put some grated beetroot mixture
  6. After that spread paneer mixture and finely stuffed with dry fruits
  7. Cover properly and make balls , dip in the batter
  8. Coat with rusk crumbs
  9. Then again dip in batter ,.and coat with crumbs ,.and put in refrigerator for 15 minutes
  10. Finely Fry in hot oil , on medium to low heat till golden or crisp
  11. Serve hot
