ABOUT Scrambled Egg Curry RECIPE

Its a bit rustic take on the usual Egg Curry and believe me you will totally love it if you are fond of rustic food.

Ingredients Serving: 2

  1. 1 medium size onion
  2. 1/2 cup tomato puree
  3. 4 tablespoon oil
  4. 1/2 Cup Green Peas
  5. 3 eggs
  6. 2 Dried Red Chilies
  7. 1 bay leaf
  8. 3-4 cloves
  9. 1 black cardamom
  10. 1 teaspoon cumin seeds
  11. 1/2 Centimeter Cinnamon Stick
  12. 3-4 Black Peppercorns
  13. 2 Tablespoon Ginger Garlic Paste
  14. 1 + 1/2 Teaspoon Turmeric Powder
  15. 1 teaspoon coriander powder
  16. 1 teaspoon red chili powder
  17. 1+1/2 Teaspoon Garam/Chicken Masala (Whole Spices) Powder (Everest or Catch Brand)
  18. Fresh coriander leaves

Instructions

  1. Beat the eggs with a fork so that it gets air trapped inside.Add a pinch of salt and beat once more.
  2. Heat oil in a flat surfaced pan and when oil is ready; add beaten egg in the pan.Add 1/2 teaspoon Turmeric Powder and 1/2 teaspoon garam masala(Whole Spices) powder and a pinch of salt.
  3. Mix everything and keep stirring till it gets cooked perfectly.
  4. Chop onion into small pieces.
  5. Heat oil in a pan.Add bay leaf and dried red chilies when oil is hot. Now add cumin seeds and let it crackle.Quickly add black cardamon, black peppercorns, cloves and cinnamon stick.Cook it for few seconds.
  6. Add chopped onions into the pan and let it cook till it turns slightly pink in color.Now add turmeric , coriander and red chili powder to the pan and cook for another minute.Make sure that it is not burning.
  7. Add ginger garlic paste now and let it cook for 30 seconds.And then add tomato puree to the pan.Let it cook for another minute or till the time you start getting the fragrance of spices.
  8. Now add peas and salt and give it stir so that everything is mixed well.
  9. Add scrambled eggs and Garam masala powder and give it a stir so that everything is mixed properly.
  10. Add 1/2 cup water to the pan and stir again and cook for another 5 -7 minutes.
  11. After 5 minutes you will notice that curry has become slightly thicker so you can turn off the gas.But if you want to make the curry more thicker then let it cook for another 5 minutes.
  12. Garnish it with fresh coriander leaves and serve it with chapati or steamed rice. ENJOY !
