Ingredients Serving: 4

  1. Small Purple Egg Plant- 4 nos( Take Baingan which we use for Bharwa Baingan)cut in to long 4 pieces
  2. Potato:- 2 big nos cut in to half and long pieces
  3. Onion:- Cut in to big pieces
  4. Tomato:- 3 nos. cut in to long pieces
  5. Coriander leaves a handful
  6. Oil as required
  7. Salt as required
  8. Turmeric Power:- 1/2 tsp
  9. Kashmiri Chilli powder:- 2 tsp
  10. Chilly powder:- 1/2 tsp
  11. Pavbhaji Masala:- 1 1/2 tsp
  12. Mustard seeds:- 1 tsp

Instructions

  1. Cut Egg plant and Potato and put it in salt water. This way your eggplant will not turn dark or black in color
  2. Cut onion , tomato and coriander leaves and set aside
  3. Heat oil add mustard seed allow it to splutter, add potato and little salt stir well cover with lid and cook for few minutes until potato is 70 % done
  4. Add Egg plant and onion and cook again for few minutes until eggplant turns soft.
  5. Once all Veggies turns soft add Turmeric Powder, Chilly powder, Kashmiri chilly powder and Pavbhaji masala stir well and cook for another 2 mins.
  6. Once masala is incorporated well with veggies, at this stage add tomato give a quick mix add little water, cover with lids and cook for 5 mins
  7. Now add coriander leaves, stir well and switch off the flame
  8. Serve this dish with dal fry and steam rice.
