About Nimki Recipe

This crunchy munchy snack is known as an ideal snacks for tea time. It is delicious and easy to prepare as well . It is basically a North Indian savoury prepared mainly during Diwali and other occasions , but nowadays every household they prepare it for tea snacks . I got this recipe from my neighbour aunty , she taught me practically how to prepare this Nimki's, preserve and use it as a tea snacks for your guest .


Ingredients to make Nimki

  • maida -1 cup
  • baking soda -1/2 tea spoon
  • Refine oil -2 tbsp for knead
  • Kalongi -1/2 spoon
  • sugar as per taste
  • salt as per taste
  • water as required

How to make Nimki

  1. In a large mixing bowl sieve the maida flour (refined flour).
  2. Add salt, sugar a pinch , baking soda kalongi and oil in the flour.
  3. Now while adding little water at time start kneading dough for namkeen.
  4. Knead the dough for maida namkeen. The dough should be a bit softer than roti dough. Once kneaded keep the dough aside to rest for 10 min.
  5. Now divide the dough into equal size balls.
  6. Take a maida dough ball on rolling board and roll into round 6-7 inch wide roti.
  7. Now using a knife cut the dough into wide strips.
  8. Rotate the rolling board and cut roti into half so that strips of maida dough remains.
  9. heat oil in a kadhai.Check if oil is hot enough by adding a small piece of maida dough.
  10. Once the oil is ready add the maida dough slices of Nimki into oil and deep fry it.
  11. Fry the nimki until it becomes golden in color.
  12. once it fried put the nimkis in a tissue paper to absorb the excess oil and set it cool for some time .
  13. The crunchy Nimkis are ready
