Ingredients Serving: 2

  1. Dhokla flour 2 bowl
  2. Curd 2 cup
  3. Water 1 glass
  4. Crushed chilli, ginger, garlic 2-3 tbsp
  5. Sugar 2 tbsp
  6. Salt as your taste
  7. Carom seeds 1/4 tsp
  8. Oil 2 tbs
  9. Grated bottle gourd 250 gram
  10. Coriander leaves 1 cup chopped
  11. For tadka :-
  12. Oil 1/2 cup + 2 tbs
  13. Mustard seeds 1/2 tsp + 1/4 tsp
  14. Cumin seeds 1/2 tsp
  15. Sesame seeds 2tbsp + 1/2 tsp
  16. Asafoetida 1/2 tsp
  17. Turmeric powder 1/2 tsp
  18. Red chilli powder 1 tsp

Instructions

  1. Take a bowl add dhokla flour ,curd salt, sugar, carom seeds and 1/2 glass of water.
  2. If needed add 1/2 more water to make little thick batter.
  3. Add 2 tbsp oil then lid it and keep in warm place for 4 hours.
  4. After 4 hours batter is ready for handwa add crushed chilli, ginger, garlic then mix well.
  5. Add grated bottle gourd, red chilli powder and turmeric powder in batter.
  6. Take kadai add 1/2 cup of oil then add mustard seeds, cumin seeds and dry red chilli.
  7. Add asafoetida and sesame seeds.
  8. Pour tadka immediately into the batter and mix well.
  9. Add coriander leaves and mix well.
  10. Mix again and check the seasonings.
  11. Now again heat kadai add 1 tbs of oil for simmer.
  12. Add little mustard seeds then add sesame seeds.
  13. Pour 2 or 3 laddle of batter in kadai and lid it.
  14. Cook on semi medium flame for 7 to 8 minutes.
  15. Then flip handwa in kadai very carefully and cook from another side too.
  16. Cook it till it become crispy and brownish it take 15 to 20 minutes.
  17. Then remove from flame and serve it with ketchap, chatni or tea.
